Summer is officially over and fall is here to take its place. Fall is a wonderful time of the year where the leaves change and our whole landscape turns into a kaleidoscope of colours. Whether your favourite part or the season is to cuddle up under a warm blanket or head out for a woodland walk – today we have a fun fall bucket list you should try to do over the next couple of months. These activities will bring true fall spirit to your life and will also be super fun for everyone.
Roast and stuff a pumpkin
One of the fun ideas you can try this month is to roast a pumpkin in the oven and full it with healthy fillings such as chicken and veggies. This is such a fun and warming fall dish ideal for any party.
Ingredients:
- 1 large cooking pumpkin
- 1 rotisserie chicken
- ½ cup cheddar cheese
- 1 tbsp fajita seasoning
- 200g black beans
- 100g sweet corn
- 1 chopped avocado
- 2 tbsp sour cream
- 1 tbsp coriander
- Cut your pumpkin in half and scoop out the seeds. Poke some holes into your pumpkin before laying on a baking sheet, drizzling with oil, and seasoning with salt, pepper, and fajita seasoning. Roast at 220C for 45 minutes to 1 hour.
- In the meantime, mix your black beans, sweet corn, chicken, and cheese in a bowl.
- Once the pumpkin is tender, fluff up the interior before adding your veggie and chicken mix. Bake for another 10 minutes until warmed through and the cheese is melted.
- Top with fresh avocado, sour cream, and coriander.
Make a pumpkin spice latte
Pumpkin spice latte might seem like something you can only get in Starbucks, but actually this is pretty easy to make at home!
Ingredients:
- 100ml water
- 100g sugar
- 1 tsp ginger
- 1 tsp cinnamon
- 2 cloves
- ½ tsp nutmeg
- 300ml milk or vegan alternative
- 1 tsp coffee
- Whipped cream
- In a saucepan, add your sugar and water. Bring to a boil and then simmer for 10 minutes.
- Add the spices to the syrup and simmer for a further 10 minutes until thickened.
- Pour into a sterilised glass jug or jar for future use.
- Heat up some milk either in the microwave or on the hob. Once hot, add your coffee and dissolve.
- Add 1-2 tsp of your pumpkin spice syrup and mix through.
- Pour into your favourite mug and top with whipped cream.
