This week I’m eating: American Pancakes

I am not really a breakfast person but having made a conscious effort to overhaul my diet this year I have been trying to find new things to eat in the morning instead of the usual toast/cereal! I have to be honest and say there is not way I could make my own pancakes- I am useless at anything like that! I have been having these really tasty ones from the brand Genesis, they cost £1.39 for 4 thick american style pancakes and you can get them in Sainsbury’s and Waitrose. I actually made them on Christmas day (by made I mean put them in the oven for 4 minutes; although I have since found popping them in the toaster also works) for the family with streaky bacon and maple syrup- and nobody new they were shop bought (result!). On a normal morning I top them with strawberries and a drizzle of maple syrup- simple, tasty and ready in under 5 minutes, perfection!
