Healthy Eating: Guilt Free Cheesy Pasta

So I wanted to start doing some healthy eating style posts as I am making a big effort to overhaul my diet! I love me some pasta, I could eat pasta every single day- but lets be real it’s not so good for you, it’s pretty high in calories and it causes a fair bit of bloat (#foodbaby) I saw lots of posts on making a carb free pasta and I’ve made my own little recipe for a really filling, seriously delicious version below!
3 x courgettes
1 x pack of grated carrots
1 x your favourite tomato pasta sauce or if your feeling fancy:
1 x tin of chopped tomatoes
1 x tea spoon of extra virgin olive oil
10 x cherry tomatoes
1 x teaspoon of chill paste
You will need a julienne slicer for this, I found one for around £3 in Lakeland and they are just fab for making ribbons of vegetables (which I did for the courgettes) which give a ‘spaghetti’ like consistency.
In a pan heat up a little splash of olive oil or low cal spray if you prefer and when it’s nice and hot add the courgettes and carrots until they are cooked to your taste, about half way through I like to add in the cherry tomatoes (if I’m making my own sauce) to make sure they are nice and soft. Once everything looks good you can go ahead and add in your sauce (or chopped tomatoes, chilli and olive oil) and mix through the courgette and carrots.
Once it’s all bubbling nicely you can dish up straight away, I like to sprinkle some more carrots and then some feta on top- if you don’t like feta then I would say use the strongest cheese you can as it means you only need a little for lots of flavour, you could even pop it in the oven to make the cheese crispy if you want! So there you have it, simple, healthy and very filling- I’ve tried it with courgettes, spinach and red onion too which is gorgeous- I would go as far as to say I’d happily switch from ‘normal pasta’ to this!

    Courgettes and carrots in a pasta? That should be very interesting to taste! And very healthy too! I’d love to try it!
