This Week I’m Eating: Spinach

Spinach is so ridiculously good for you that I have been trying to find lots of easy ways to incorporate it into my daily diet. I really love the spinach balls rigatoni that you can get in Carluccios and wanted to make my own version of it without the calories (that version is a lot richer but pretty amazing) ! I used rigatoni pasta because it’s a lot bigger that normal pasta shells and that means I end up putting less in my bowl, I simply pan fried some courgettes and finely chopped (and pre-boiled in boiling water) spinach, I cooked it in a splash of olive oil and a table spoon of garlic before adding to the pasta (and one more splash of olive oil) and mixing it all together. It is that simple, I served it with a sprinkling of parmesan and it was sooooo good, I made way too much of it though so that’s lunch tomorrow sorted too! 
I don’t have enough experience with cooking to do anything fancy so this was right up my street, simple to prepare but looks really impressive- the mixture of spinach and garlic was especially lovely- I’ll definitely be making this again!

    im definitely going to try this! i really really hate cooking, when you have to prepare and chop up lots of ingredients… so this is right up my street! maybe add some ham and mushrooms too? cant wait to try this πŸ™‚

    My favourite thing to do with spinach is frittata- with goats cheese or feta. Its so yummy.
